Olive Oil Cake

Ingredients:

190g. sugar, devided

2 egg yolks

3 egg whites

25g. lemon juice

1 tbls. lemon zest

Vanilla bean seeds

110g.Cake flour , bleached

160ml. Olive Oil extra virgin

salt

 

Method:

Preheat oven 160 degrease.

Combine 110 g. sugar, egg yolks, lemon juice, vanilla bean seeds, and lemon zest. Mix them with mixer in a bowl.

Sift flour. Gradually add while mixing on medium speed.

Spinach souffle

Ingredients:
(4- 5 servings )

Butter
2 tablespoons dry breadcrumbs

200 g. fresh baby spinach

200 ml. milk

2 tablespoons all-purpose flour

salt, ground nutmeg and black pepper  to taste

40 g. freshly grated Parmigiano-Reggiano cheese

2 large egg yolks

4 large egg whites

Preparation:

Preheat oven to 180.

Coat the ramekins with some butter and sprinkle evenly with breadcrumbs, tilting and turning dishes to coat sides completely.

Creamy sweet Potato Coconut Soup

Baked Ricotta with zucchini

This dish is rich, creamy snd delicious. It can be served for lunch or dinner with salad, meat or even pasta on the side.

Cauliflower Hash Browns

Ingredients:

1 head of fresh cauliflower
Himalayan salt
2 tablespoons of olive oil
1/2 bunch of parsley, finely chopped
1/3 bunch of dill, finely chopped
2 gloves of garlic, finely chopped
150 grams of grated Parmesan cheese
2 eggs
black pepper
1/2 tea spoon of turmeric
1/2 tea spoon of cumin

Black chocolate truffles

Ingredients for 10 truffles:

150 grams (or 1 tea mug of) high quality black chocolate
120 grams (or a little more than half a mug of) high-fat cream
25 grams (or 1/3 mug of) powdered cocoa
Chopped nuts for decoration
Coconut flakes for decoration

Breakfast pockets with eggs and cottage cheese

Preparation time: 15 minutes / Cooking time: 5-7 minutes

Ingredients for 2 servings:

2 eggs
4 sheets of filo dough
100 grams of turkey ham or bacon (skip this ingredient if vegetarian)
