Preparation time: 15 minutes / Cooking time: 5-7 minutes

Ingredients for 2 servings:

  • 2 eggs
  • 4 sheets of filo dough
  • 100 grams of turkey ham or bacon (skip this ingredient if vegetarian)
  • 50 grams of grated Parmesan cheese
  • 200 grams of cottage cheese (I use Olympus cheese)
  • Mix of fresh parsley, dill, basil and mint)
  • Salt

Preparation:

You need two sheets of filo dough for one serving. Put them one over the other and shape them into a square with size 25 by 25 cm.

Put on top the ham/bacon, add the cottage cheese in the middle of the square. Fold the top, then the bottom, then the left and right side of the squared sheet. Move the pocket into a baking pan, covered with baking paper.

Add the egg on top and spice up. Sprinkle with grated Parmesan cheese.

Bake for 5-7 minutes on 160 degrees or until it’s ready.

Serve the ready pockets with fresh parsley, dill and basil.
